How to make ultimate Sambar?
The key to make very good Sambar is in the sambar powder that you use.
I have tried to compile the way the Sambar is made in traditional way with home made powder.
So the question boils to how to make nice home-made Sambar powder. Here is my mom's recipe
Enough for 2 people for more than 15 times of making sambar
200 gm Channa Dhal
250 gm Red chilli (if chilli is very hot 100-150 gm is enough)
round chilli is preferred than the flat sticky one
400 gm Dhaniya
1 tbsp pepper
2 tbsp jeera(cumin seeds)
1 tbsp Methi
1 turmeric stick( not the round/conical one but the one that look like twigs) This is optional only if you get use this
Point to Note:
Grind only in Mixie. Don't give it for grinding in mills.
Step 1:
Add 1 tbsp oil and fry channa dhal little bit( just for 2 minutes)
Add Dhaniya to that. Fry it for another 2 minutes. Dhaniya should not become black.
Step 2:
Separately add 3 tbsp oil and fry chilli . ( keep the flame in sim)
Step 3:
Take dry empty pan fry Methi for 2 minutes and add pepper and jeera to that. Fry it for 2 more minutes
Step 4:
Grind all these in mixie and keep it in an air tight container.
